What’s the background of Khao Suey?
It is basically one of the traditional dishes from Burma. It consists of vegetables, noodles and coconut milk. Traditionally, it consists of either eggs or chicken. But you have the option to make it completely vegetarian too!

Vaishali Bhatnagar’s recipe of Khao Suey
Step 1 – Preparation of Onion Paste
Ingredients required – 1 medium chopped onion, 1 inch ginger piece and 6-7 cloves of garlic, 2 green chillies, coriander stems and some water to make the paste.
Just grind all these ingredients well enough to make a paste.
Step 2 – Preparation of Khao Suey’s soup begins!
Take one tablespoon oil in a pan and heat it, and then put the onion paste in the pan, stir it nicely so as to make sure it is thick and also soft at the same time.
Next, add two teaspoon turmeric powder, two teaspoon red chilli powder, 1 teaspoon roasted cumin powder, 2 teaspoon coriander powder, salt as per your taste preference and bit of water to mix it all again nicely.
Step 3 – Here comes the vegetables
You can use vegetables as per your likings, here I have taken chopped carrots, chopped French beans, chopped zucchini, chopped baby corns, and chopped mushrooms.
All these vegetables make up an amazing healthy combo, right?
Put all these vegetables in the same pan and add ½ litre of water to it.
Boil the soup just for two minutes to make sure that the vegetables remain crispy. In the end, as the soup boils, add some spring onions in the soup and small piece of jaggery that would add a sweet twist to the dish.
Step 4 – What to do with Coconut milk?
Here, we will take 400ml coconut milk, add 1 tablespoon besan to it and stir it nicely until you’re satisfied that there are no lumps in it.
Now the coconut milk and besan mix is ready.
Step 5 – The final stage
In the final step, you have to pour the coconut milk and besan mix into the pan having the soup, but make sure the burn is turned off much before as the soup must not be in boiling state when you pour the mixture to it.
Finally, add the mixture to the soup and then boil it on medium to make it ready to serve.
Serving the deliciousness!
The Khao Suey soup is served is with boiled noodles. Put the noodles in a bowl, and then pour the soup along with the veggies into the bowl.
