Some people are madly in love with deep-fried stuff. Some people are so health-conscious that they say a strict NO to everything that has even the slightest amount of oil. 

And then there are people who don’t care about anything and just eat whatever they want and whenever they want, it can be an oily dish at times, or it can be a healthy soup or salad too. For them, it’s their mood that matters the most.

No matter who you are, it is almost impossible that you never heard of onion kachoris if you happen to live in India. People hardly try to make it at home as they find delicious options in kachoris in the restaurants, but I’m telling you! Once you try my recipe and make it at home, you will never turn back to the restaurants to buy kachoris.

Follow the steps below to have the complete details of what you need to do to prepare this dish.    

In a big deep bowl, take 2 cups of maida, add 1 teaspoon salt, 1 teaspoon ajwain, ½ cup oil and stir it all. Add water at regular intervals if you feel the need for it as you kneed the mixture to make a dough. 

Once the dough is ready, keep it aside for fifteen minutes.

Now, take a pan and boil some oil in it. Add ½ teaspoon cumin seeds, 3 finely chopped green chillies, 1 teaspoon ginger paste, 4 finely chopped (medium-sized) onions, and mix it all as you cook it. Add some salt to it for taste.

Next, add 1 teaspoon red chilli powder, ½ teaspoon black pepper powder, 1 teaspoon roasted cumin powder, 1 teaspoon fennel powder, 1 teaspoon garam masala and cook it all. Add one teaspoon oil in and ½ teaspoon asafoetida. 

Now, add 2 medium size mashed potatoes and cook it all for five to seven minutes more. Finally, add some lemon juice to it for extra taste and flavour. Sprinkle some coriander and let it cool for some time.

From the dough that we prepared in the beginning, make small roti like shapes using the rolling pin and board and then stuff it with the masala that we just prepared.

After stuffing it, make it a round ball and again flatten it with the rolling pin and board.

Now, put the kachoris in the oil heating at low flames. Fry the kachoris in the oil until the colour turns golden. And that’s how it is prepared!

Repeat the same step with the remaining kachoris and you’re good to go.
