Main ingredients: 

For white sauce: Oil, Butter, Maida, Milk, Oregano, Nutmeg Powder, Black Pepper Powder, Chilli flakes, Processed Cheese.

For red sauce: Oil, chopped garlic, green chillies, chopped onion, Ginger paste, Chilli flakes, Oregano, Black Pepper Powder, Red Chili Powder, Tomato Puree, Salt.

For Stir veggies: Oil, chopped garlic, green chillies, chopped carrots, Corn, French beans, Zucchini, Bell peppers, chopped Mushrooms, Salt, Black Pepper Powder, Chilli flakes, Lasagna sheets, Salt, readymade pasta sheets.

Vegetable lasagna is a veggie loaded cheesy recipe. Spinach and tomato sauce compliments it with more charm. Trust me, if you believe that there is nothing tastier than a meat meal, then today I will prove you wrong with this amazing recipe.

This vegetable lasagna is the perfect dish for vacations or even weeknights. While there can be a difference in vegetables that use in vegetable lasagna and is non-vegetarian version, but tomato sauce remains a constant in all of its recipes.

Flexible choice of vegetables

One of the best things about this dish is that you can use any vegetables according to the season or whatever is available at home. This dish is really flexible, your favorite vegetable can easily find a place in its recipe.

The sauce

The tomato sauce is prepared from scratch with some really basic ingredients, and it takes a couple of minutes to cook.

No boil noodles

If you want to use noodles, then go for no-boil noodles, also you need not have to cook them, all you need to do is layer them up.

Let’s see how to make vegetable lasagna

Preparation of white sauce

In a pan, take half teaspoon oil and heat it, add 2 tablespoon butter and mix it with the oil. Let it melt for some time and then add 2 tablespoon maida. Cook it for a while until you see the bubbles and then pour 1 cup milk to the pan and mix it.

Add one more cup of milk and mix it to avoid lumps. Add salt, oregano (1 teaspoon) and ½ teaspoon nutmeg powder. Now add ½ teaspoon black pepper and 1 teaspoon chilli flakes and mix it all nicely in the pan.

Finally, add processed cheese to it and let it melt completely. The white sauce is ready now!

Preparation of red sauce

Take a pan and pour two tablespoon oil and heat it. Now add 2 teaspoon chopped garlic, 2 teaspoon green chillies, 1 chopped onion and stir all completely. Next add 1 teaspoon ginger paste, 2 teaspoon chilli flakes, 1 teaspoon oregano, 1.5 teaspoon black pepper powder, 1teaspoon red chilli powder to it.

Now make tomato puree of 5 medium sized tomatoes and pour the same to the pan. Add salt as per your taste. Cover the pan with the lid and cook it for at least 5 minutes. Now, the red sauce is also ready!

It’s time for the preparation of Stir Fry Veggies

Heat a pan with 2-3 tablespoon oil and around 4-5 chopped garlic buds, green chillies as per your taste and stir it all. Now, add ¼ cup chopped carrots, ½ cup corn, ¼ cup French beans and cook it for a while. 

Next add some green zucchini, ½ cup yellow bell pepper, ½ green bell pepper and ½ red bell pepper and mix everything as you cook it all. 

Finally, add ½ cup chopped mushroom and salt as per your taste, 1 teaspoon black pepper powder and 1 teaspoon chilli flakes.

Boiling the Lasagna sheets 

Take another pan and boil water in it. Next pour 1 tablespoon oil and salt as per taste. Now, put the ready made pasta sheets in the pan having the boiled water. Let it boil for some time. Make sure that you don’t over boil it and it shouldn’t be too soft.

After some time, place the sheets one by one on a plate and brush the sheets with some oil.

Layering of the lasagna

Take a ovenproof tray and spread the first layer of tomato sauce in it. Put the next layer of pasta sheets on the tomato sauce layer and again layer it with tomato sauce spreading it all over and then spread the white sauce on it as cover the tomato sauce completely. 

Finally cover it all with a layer of stir fry vegetables and garnish it with processed cheese. Now add one more layer of pasta sheets and spread tomato sauce and white sauce on it along with the stir fry vegetables and garnish it with mozzarella cheese or any cheese of your choice.

Once it’s done, you have to bake it all in 200 degrees Celsius in the oven for around 20-30 minutes and it will be ready to eat.
